I am NOT a McCain supporter. But just how could they say Obama won just because he got 270 electoral votes wh?

from what I have heard, Obama won because he was the first to get 270 electoral votes. But how can they say that this means he won without counting all of the states? For example, the polls in Alaska were said to be opened until 1 a.m p.s.t., or 4 a.m. eastern time. But the race was called at approximately 12 a.m. e.s.t., meaning that anyone who had yet to vote at that time, it just didn't count for them. Likewise, although I SERIOUSLY doubt this, but in fairness, HAD all of the states been counted McCain may have in fact had more electoral votes than Obama. So does this count for anything? Because shouldn't everyone's vote count, instead of them just saying the first one to get to 270 electoral votes?
